Job Summary The Banquet Chef is responsible for all food and beverage procurement required for the catering events. Organizes the food production list and oversees the production of food for all banquets held at the Charlotte Convention Center and NASCAR Hall of Fame. 1. Essential Job Duties Menu Planning & Development: * Collaborate with sales managers or clients to design custom banquet menus, taking dietary preferences, allergies, and special requests into account. * Up to date with food trends, seasonality, and innovations to create sustainable and appealing options. * Food preparation & cooking * Oversee the preparation, cooking, and presentation of dishes for large scale events. * Ensure food is prepared in accordance with established recipes, portion sizes, and presentation standards. * Supervise kitchen staff to ensure all food is cooked and presented to set standards. Staff Management & Training * Manage and direct personnel, ensure proper training, production assignments, and efficient workflow. * Conduct staff training on food preparation, kitchen safety, sanitation, and hot/cold food handling procedures. * Monitor kitchen operations to be in compliant with health and safety regulations. Quality Control & Presentation * Maintain the highest level of food quality, flavor, and presentation for all dishes and displays. * Ensure that dishes are delivered in a timely manner and presented in accordance with company specifications. * Troubleshoot and resolve any issues related to food quality or guest complaints during events. Inventory & Cost management * Monitor inventory levels and order food and supplies. * Control food costs by managing portion sizes and minimizing waste. * Event Coordination * Coordinate the timing of food preparation and service with event schedules. Health & Safety * Compliance with all local food safety and sanitation regulations. * Maintain cleanliness and organization in the kitchen and dry storage ensuring all equipment is properly sanitized and stored. * Serv-safe certified * Perform other duties as requested. * Must be able to work flexible hours to include evenings, weekends, and holidays. 2. Scope of Responsibility * This job has budgetary responsibilities as it relates to labor and food cost associated with the kitchen catering operation. * This job will have periodic access to confidential data including financial statements, company records and/or minutes, customer quotes, and company plans, designs, and programs. Supervisory Responsibility * Supervises as many as fifty part time employees and three full time employees within the kitchen area. * Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include training employees; planning, assigning, and directing work; appraising performance; participating in budget preparation, addressing complaints and resolving problems. Knowledge and Skill Requirements * Previous supervisory experience. * Excellent written and verbal communication skills, with the ability to effectively convey information to managers, customers, and the public. * Bilingual proficiency in Spanish is strongly preferred. * Strong problem-solving abilities. * Proficient in Microsoft Word, Excel, and other relevant software. Familiarity with general office equipment. Education and Experience * High school diploma or general education degree (GED); and five years related experience in a high-volume banquet facility and/or training; or equivalent combination of education and experience. Physical Demands * The employee must regularly lift and /or move up to 50 pounds. * Specific vision abilities required by this job include close vision. While performing the duties of this job, the employee is regularly required to sit; use hands to handle or feel and talk or hear. The employee is frequently required to stand and walk. Work Environment * The noise level in the work environment is usually moderate. Travel Required * This job has no travel requirements.
